Breakfast


Overnight Oats:

- 1/3 cup rolled oats
- 2 Tbls chia seeds
- ¾ cup Almond milk or less
- ½ cup berries – frozen rasberries
- ½ tsp honey or maple syrup

Combine all ingredients in a jar or container, mix well and keep in fridge overnight. Add 1 tbls of nut butter in a bowl the next morning.



Banana Eggs Pancake:

- 1 banana
- 2 eggs
- 1 tbs coconut oil
- 1 tsp cinnamon

Mash banana and beat up eggs. Mix together, add cinnamon. Heat oil on pan and add batter.
You can also add in the following to the batter:

* 2 tbsp of flax seeds
* 1 tbsp of coconut powder
* A small handful of hazelnuts, almonds or walnuts
* 1 tbsp of peanut butter
* 1 tbsp of raisins
* 1 tsp of cinnamon
* 1 tsp of vanilla extract
* A few thin slices of apple or pears

Topping ideas:
* Honey
* Maple syrup
* Cherries, strawberries

Apple Quinoa Porridge:

- 1 cup pre-cooked quinoa
- ½ cup chopped nuts
- ½ cup water
- 1 tsp cinnamon
- ½ apple, chopped
- ¼ cup raisins

In a small pot combine all ingredients. Bring to boil then reduce heat and simmer until water is absorbed into a porridge consistency.

Eggs with leafy greens:

- 2-3 eggs
- 1 cup chopped spinach or kale
- 1 clove garlic
- 1 tsp coconut oil
- Sea salt & pepper

Beat egs in a bowl. Heat coconut oil in a frying pan, saute garlic, and greens for about 1 minutes. Pour into pan. Cook until eggs are set.

Scrambled Eggs with greens & Cherry tomatoes:

- 2-3 eggs
- 1 cup chopped spinach or kale
- 1 cup of cherry tomatoes
- 1 clove garlic
- 2 tsp olive oil
- Sea salt & pepper

Beat eggs in a bowl, add salt & pepper.

Heat 1 tsp olive over medium heat in a pot, add garlic, cherry tomatoes and greens, mix well till greens have wilted. In a separate pot heat 1 tsp olive oil over medium heat add eggs and mix well for 1-2 mins till scrambled.

Breakfast bars:

- 2 cups oats
- 4 large tbsp of nut butter of choice
- 1 banana
- 3 tbsp of honey
- 1 tsp cinnamon
- Handful of any seeds, (I used chia & sunflower
- Option to add handful of raisins and handful of nuts.

Preheat oven to 200 c, melt nut butter & honey in saucepan, mash banana and add to saucepan.

Let mixture melt and add oats, seeds nuts etc. mix well & remove from heat.
Place on baking sheet in tray, grease with coconut oil. Place mixture into tin and spread evenly.
Place in oven for 30 min. Take out & cool for 15 min and cut into bars. Enjoy!

Warming Oatmeal:

- 1/3 cup of oatmeal
- ¾ cup Almond milk
- ½ cup frozen berries
- 1 Tbls chia seeds
- 1 Tbls linseeds

All ingredient to saucepan except seeds to saucepan, stir and cook, when cooked add seeds.

Green Smoothie in a Bowl:

- 2 handfuls of kale or spinach or both
- ½ banana or avocado
- ¼ cucumber
- 1 cup of frozen berries
- ½ inch piece of ginger or less
- 1 tbsp almond butter
- 2 cups of water or coconut water or almond mix.

Blend and pour into bowl, option to add chia seeds, linseeds or extra berries to bowl.
