Snacks & Desserts



Hummus:

- 1 tin chickpeas
- ½ cup tahini
- ¼ cup olive oil
- 2 cloves garlic
- Juice of 1 lemon
- ½ tsp salt
- 2 tbl water

In blender or food processor, combine all ingredients. Taste & adjust seasoning.

Spicy Salsa:

- 4 tomatoes or 1 small punnet of cherry tomatoes
- 1 jalapeno red pepper
- Handful of fresh coriander
- Juice of 1 lime
- 3 tbls of olive oil
- Salt & pepper
- Sprinkling of chilli flakes

Slice tomatoes really fine and slice the jalapeno in half, remove the seeds, then slice.
Chop coriander leaves and place ingredients in bowl, mix well, add lime juice and olive oil.

Kale Pesto:

- 1 cup basil
- 1 cup kale
- 1 clove garlic
- 2 tbsp tahini
- 2 tbsp olive oil
- Salt
Process in a food processor until smooth.

Popcorn:

- Buy old fashioned popcorn that you pop on a pot not the microwave.
- ¼ cup coconut oil
- ¾ cup popcorn
- 1 tbl salt

Optional toppings:
Pepper, dried herbs, spices, sesame seeds.
In a large pot melt coconut oil and add a few kernels, cover and wait till they have popped then add the rest of the popcorn and shake.
Leftovers can be stored in an airtight container or plastic bag.

Kale Chips:

- 1 large bunch of kale
- 2 tbl olive oil
- 1 tsp sea salt
- 1 tsp chilli flakes
Preheat oven to 200 F , tear kale leaves in chip sized pieces, massage kale leaves with olive oil and add salt & chilli flakes.
Place in large tray for about 10 minutes, flip around and return for about another 5 minutes, should be crispy.
Watch as they burn easily!

Banana Ice Cream:

- 2 banana – cut up before freezing
- 1 tbsp vanilla
- ½ cupof almond milk
- Optional toppings fresh berries

Add ingredients to blender or food processor. Blend and enjoy

Raw Brownie Bars:

- 1 cup walnuts or cashew (both mixed)
- 1 1/3 cup pitted dates
- 1 tsp vanilla
- 3-4 tbsp cacao powder or cocoa powder (just make sure there is no added sugar)

Blend all the ingredients in a food processor.
Turn bars onto grease proof paper, roll into balls or form into bars.
Put in fridge.

Mango Pie:

- 1 cup almonds
- 1 cup dates
- 1 mango
- 1 banana
Process almonds with dates, the mixture should stick together, if it doesn’t add more dates.
Press this crust into bottom of glass dish.
Process mango and banana, to thicken add more banana. Pour filing over the crust. Top with sliced banana.

Raw Chocolate Truffles:

- ¼ cup coconut oil
- ¼ cup honey or maple syrup
- ½ cup cacao or good quality coco
Process all ingredients together.
Option to add in mint flavouring, cayenne pepper or shredded coconut. Refrigerate for at least 10 minutes and then roll into truffles. Keep refrigerated.

Chia pudding:

- 2 tbls chia sees
- ¾ cup fresh or frozen berries
- 1 tsp honey
- ½ tsp cacao or good quality coco
Put chia sees in a glass jar, add ingredients. Shake really well and put in fridge. Leave for a few hours or overnight.
